Given that I’m currently 34 weeks pregnant, I wanted to create a Christmas drink recipe SO good, it would taste equally as delicious as a cocktail or mocktail.
I’m happy to report that after a few fun hours playing around in the kitchen, Aaron and I created the ideal drink.
Our Festive Pomegranate Sparkler combines the tartness of lemon and pomegranate juice with the sweetness of simple syrup.
And then we finished it off on a refreshing note with fresh mint and Montellier Sparkling Water. I’ve been obsessed with Montellier – it’s SO crisp and I love that it’s 100 percent sourced here in Canada from Quebec.

Festive Pomegranate Sparkler
Yields: One drink
You’ll need:
- 5 mint leaves
- 1 tbsp simple syrup
- 1 ounce pomegranate juice
- 1 ounce freshly squeezed lemon juice
- Ice
- 1.5 ounces white rum
- 1 tbsp pomegranate seeds
- Montellier Sparkling Water, to top
Directions:
Add four mint leaves to the bottom of a sturdy glass, followed by the simple syrup, pomegranate juice and lemon juice. Use a muddler to press down on the mint leaves and give a gentle twist to help release the mint oils.
Fill the glass with ice. Add rum, if desired, and pomegranate seeds. Top off drink with Montellier Sparkling Water and stir to add a bit of fizz. Garnish with remaining mint leaf.
Simple syrup recipe
Boil equal parts sugar and water in a medium saucepan until the sugar fully dissolves. Remove from the heat and allow it to cool before using.
When making simple syrup for cocktails, I usually use one cup of water and one cup of sugar. The simple syrup can then be stored in the refrigerator for up to three weeks.
