Are you a breakfast enthusiast? Well buckle up, because I have the fluffiest, crispiest Easter waffle recipe comin’ at ya!
I’d love to take credit for the recipe but all kudos goes to Emily Mardell, Registered Dietitian (RD), expert in family nutrition and GetJoyfull Founder. We caught up this week to chat about the importance of involving your littles in the kitchen, especially during this time when we’re all housebound.
Plus, it was nice to just catch up. While we’re all practicing social distancing, it’s normal to feel a bit lonely or isolated. It brightened my day to connect with Emily, who on top of being an Edmonton-based RD, is also a Mama of three! Oh – and for the record, she’s super beautiful, too. Just sayin’:

I couldn’t agree more. Getting my three-year-old daughter, Elle, involved in meal preparation at home is very important to me.
We had a lot of fun creeping through Emily’s site, getjoyfull.com, to find the perfect recipe to make together. I was especially drawn to these waffles using Alberta eggs. Let’s take a peek:
Fluffy Easter Waffle Recipe
Depending on whether you love that savoury life or have a sweet tooth, you can dress these waffles up to make them savoury or sweet!
You’ll Need
Dry
- 1 ½ cups flour
- ¼ cup cornstarch
- ¼ cup sugar
- ½ tsp salt
- 1 ½ tbsp baking powder
Wet
- 3 tbsp vegetable oil
- 3 eggs, separated
- 1 tsp vanilla
- 1 ½ cups buttermilk
Directions
- Preheat waffle maker.
- In a medium bowl, combine and sift dry ingredients.
- Separate eggs.
- In a medium bowl, combine egg yolks, vegetable oil, vanilla and buttermilk.
- Using a whisk or electric mixer, whip egg whites to firm peaks. Reserve.
- Combine wet ingredients and dry ingredients with whisk until smooth batter forms.
- Using spatula, fold in whipped egg whites to firm peaks.
- Ladle batter into waffle iron and cook until golden.
- Top with your favourite toppings. Whether it’s fresh berries and cream, peanut butter and banana or avocado and tomato, the options are endless!
I chose to add an Easter twist to our waffles and topped them with fresh-cut strawberries, banana slices, whipped cream and mini eggs. Talk about delicious!
