Magic Colour Changing Lemonade Recipe

Elle’s favourite colour is blue and she’s BIG into science experiments at the moment, so I thought it would be fun to combine her newfound love with one of mine: experimenting in the kitchen.

The result was this magical twist on a traditional summer beverage: colour changing lemonade.

Though bright in colour, this lemonade is quite classic in taste. In fact, I blind folded Aaron and had him try the lemonade – which he confirmed tasted the same as usual. As I’m sure you can imagine, when he removed the blindfold, he was quite surprised to find he was drinking a bright purple concoction!

All About Butterfly Pea Flowers

The ingredient used to create the vibrant blue and magenta tones is a natural one: dried butterfly pea flower.

When brewed, it has a subtle, earthy taste and a deep blue tone. Traditionally used in Thai and Malaysian cuisine, it’s celebrated for its ability to transform colours with a change in pH – in this case, from the addition of lemon.

Here’s how to blend up this drink:

Magic Colour Changing Lemonade

Yield 1 drink 

You’ll need:

  • Ice cubes, crushed
  • Blue ice cubes, semi-crushed (recipe below)
  • Fresh lemonade, to fill (recipe below)
  • Lemon wheel, to garnish

Directions:

Using a blender, crush about two handfuls of regular ice and add it to the half-way point of a tall drinking glass.

Then crush about three handfuls of blue ice, ensuring that some larger blue chunks still remain, and add it to the glass until full.

Slowly pour in the lemonade and watch the color transformation take effect! Top with an extra spoonful of blue ice, garnish with a lemon wheel and enjoy.

To Make Lemonade

Yields 1 60 oz standard pitcher. 

You’ll need:

  • 1 cup boiling water
  • 1 cup sugar
  • 5 lemons, juiced
  • Cold water, to top

Directions:

In a pitcher, dissolve one cup of sugar in one cup of boiling water. The heat helps the sugar dissolve properly – you don’t want your lemonade to be gritty. Stir vigorously until fully dissolve. Refrigerate for a few minutes, until cooled.

Add the fresh-squeezed lemon juice and top your pitcher off with cold water. Refrigerate until chilled.

To Make Blue Ice

You’ll need:

  • Dried butterfly pea flowers
  • Loose leaf tea bag
  • Boiling water
  • Ice cube tray

Directions:

Taking into consideration how much ice you’d like to make, brew 1.5 tsp of butterfly pea flowers per cup of boiling water. Brew in loose leaf tea bag until deep blue in colour, about five minutes. Then pour into ice cube tray and freeze.
