The kids and I came up with a fun idea recently – leading up to the holidays, we’re going to attempt to bake something new every week! First up is this Coconut Milk Cake.
My Mum made this recipe growing up and decades later, it’s still a hit. It’s SO fluffy, has the most delicious brown sugar coconut topping, and is a really simple recipe, making it ideal to help build your little one’s confidence in the kitchen.
It also tastes great served hot or at room temp and this Christmas tree silicone pan was perfect for adding a bit of Christmas flair.
Here’s how to make it:
Coconut Milk Cake
Ingredients
Cake
- 2 beaten eggs
- 1 cup sugar
- 1 cup flour
- 1 tsp baking powder
- ½ cup hot milk
- 1 tsp butter
Coconut Topping
- 2/3 cup brown sugar
- 2 tbsp milk
- 4 tbsp melted butter
- 1 cup shredded coconut
Directions
Preheat oven to 350ºF. Grease pan. Whisk together eggs and sugar. Add flour, baking powder, hot milk and butter until just combined. Bake 30 minutes.
While baking, mix together coconut topping ingredients. Remove cake from oven, spread coconut topping overtop evenly and bake a further ten minutes.
