The stars of this Passion Fruit White Tea Cocktail are fresh lemon, passionfruit, mint and Kumsi Tea Tropical WhiteLet’s take a look at the recipe, as well as my favourite way to make iced tea: cold brewing.

Passion Fruit White Tea Cocktail

Yields 1 cocktail

You’ll need:

  • Three mint leaves
  • 1.5 ounces peach vodka
  • 3 ounces iced white tea – our preference: Kusmi Tea Tropical White
  • 2 ounces passionfruit juice
  • The juice of one lemon wedge
  • Pulp and seeds of half a purple passion fruit

Directions:

To help release mint oils, use a muddler or the back of a spoon to lightly press mint leaves into the bottom of a glass. Fill the glass with ice and add vodka, iced tea, passionfruit juice, lemon juice and passion fruit. Stir to combine. Garnish with mint leaf or lemon wedge, if desired. Enjoy!

Full disclosure: this drink has a light, natural sweetness. However, if you’re looking to satisfy your sweet tooth, add simple syrup.

How to Cold Brew Tea

I’m a huge tea fan – have been for years. And while black chai was always my go-to, I’ve been experimenting with different varieties and flavours from Kusmi Tea Paris over the last year. They make luxury teas bursting with flavour… and now that I know how good tea CAN be, there’s no going back to the grocery store brands I used to purchase!

Just recently I started brewing my own iced teas using the cold-brewing process. It’s a much gentler process than boiling, resulting in a tea that’s smooth and never bitter. Plus, it’s SO simple:

  1. In a glass container, steep one heaping teaspoon of tea for every cup of cold or roomtemperature water.
  2. Allow to stand one hour at room temperature. Then brew in the refrigerator for between 8 and 12 hours, or as long as 48. If desired, you can steep with fresh fruit or herbs for extra flavour.
  3. Strain, serve over ice and enjoy! If desired, sweeten with simple syrup or honey.
