Oh, Alberta winters: your days feel so long. Your cold feels so cold. And each night all I want to do is Netflix and chill next to the fireplace with a glass of red wine in hand. And, to be honest, I’m totally okay with it! It feels so good to have an excuse to just slow down, stay inside and enjoy the simple pleasures at home.
So when my friends at Lilydale® reached out to see if I’d like to develop some comfort food recipes using their incredibly delicious Canadian poultry products, I was allllll over it.
The result? Three hot and tasty hand-held recipes that’ll warm your stomach this March:
- Roasted Tomato and Basil Turkey Sandwich
- Ginger-Glazed Sriracha Turkey Burger
- Crispy Buffalo Turkey Caesar Wrap
Let’s check ‘em out!
Roasted Tomato and Basil Turkey Sandwich
Makes 2 sandwiches
You’ll Need:
For the Sandwich
- 6-8 Lilydale® Turkey Breast Strips
- 2 brioche buns
- 2 slices swiss cheese
- Mayonnaise
- Dijon mustard
- 1 cup fresh basil
- 1 cup spring mix
For the Roasted Tomato Mixture
- 1 cup grape tomatoes(halved) or roma tomatoes (chopped)
- 1 large (or two small) scallions, sliced
- 1 tbsp olive oil
- 1 tsp dried basil
- Salt and pepper, to taste
Directions:
- Preheat oven to 425 °F (218 °C). Arrange frozen Lilydale® Turkey Breast Strips on a foil-lined baking sheet and cook for 10 minutes. Then flip and cook for an additional 10 minutes, or until the turkey reaches an internal temperature of 165 °F (74 °C).
- Line a second pan with foil and cooking spray. Toss tomatoes, scallions, dried basil, salt and pepper with olive oil and arrange on pan. Roast for about 25 minutes – still at 425 °F – or until the tomatoes are blistered and tender.
- Once the turkey and tomato mixture are done, cut the brioche buns in half. Add a swiss cheese slice to one side, arrange on a baking sheet and toast in oven, about 3 minutes.
Spread some mayonnaise and Dijon mustard on the second half of the brioche bun. Pile high with cooked Lilydale® Turkey Breast Strips, fresh basil, spring mix, tomato mixture and enjoy!
Of all the recipes I’ve made recently, this is my absolute favourite. The tomatoes are so flavourful and juicy and pair so nicely with the fresh basil, swiss and turkey.
Ginger-Glazed Sriracha Turkey Burger
Makes 2 burgers
You’ll Need:
For Burger
- 2 Lilydale® Homestyle Turkey Burgers
- 1 tbsp olive or vegetable oil
- 2 cups spring mix
- Half an avocado, sliced
- 2 brioche buns
- 2 slices Monterey Jack jalapeno cheese
- 2 tbsp mayonnaise
- 1/2 tbsp sriracha sauce
For Ginger Glaze
- 5 tbsp sugar
- 4 tbsp soy sauce
- 2 tbsp rice wine vinegar
- 1 tbsp fresh grated ginger
Directions:
- Preheat oven to 350 °F
- Pan-fry the Lilydale® Homestyle Turkey Burgers from frozen with oil in a non-stick pan on medium heat for 7 minutes. Then flip and cook for another 7 minutes, or until the burgers reach an internal temperature of 165 °F (74 °C).
- Meanwhile, combine mayonnaise with sriracha sauce. We like our sauce spicy, so I use 1/2 tbsp of sriracha per 2 tbsp mayo. However, if you like it on the milder side, use less sriracha. Set aside.
- Combine sugar, soy sauce, rice wine vinegar and grated ginger in a sauce pan and bring to a boil. Reduce to low and simmer until thickened.
- Cut the brioche buns in half. Add cheese slice to one side, arrange on a baking sheet and toast in oven, about 3-5 minutes.
- Brush the Lilydale® Homestyle Turkey Burgers with the ginger glaze.
- Spread the sriracha mayo on the second half of the brioche bun. Pile high with turkey burger, spring mix, avocado and enjoy!
I love how this burger has so much flavour and is SO easy to make.
