Ginger Turkey Rice Bowls

Listen, I don’t make the rules but there’s something about topping a rice bowl with pickled onions and a fried egg that makes it taste next level delicious! Luckily, these Ginger Turkey Rice Bowls have both.

Ginger Turkey Rice Bowls

Makes 2 servings (double or triple the ingredients for 4 or 6 people)

Ingredients

  • 2 free range eggs, fried (I used Farmer’s Finest)
  • 3/4 cup white rice
  • 1 ¼ cups water
  • 1 tbsp ground ginger
  • 1 tbsp ground garlic
  • 1 tbsp oil
  • 2 cups mixed veggies (broccoli, cauliflower, carrot)
  • Salt, to season
  • Pepper, to season
  • 250 g ground turkey
  • 2 tbsp soy sauce
  • 1 ½ tbsp brown sugar
  • 1/2 tbsp butter
  • Pickled onions, to top
  • Sesame seeds, to top
  • Sriracha sauce, to top

Instructions

  1. Before starting, wash and dry all produce and rinse rice.
  2. Bring 1 ¼ cups of water to a boil and add rice, ½ tbsp ground ginger and ½ tbsp ground garlic. Reduce heat to low. Cook, still covered, until rice is tender and liquid is absorbed, 12-14 min.
  3. While rice cooks, heat a large non-stick pan over medium-high heat. When hot, add 1 tbsp oil and vegetable mix. Cook 4-5 minutes, stirring occasionally, and season with salt and pepper before transferring to a plate and setting aside.
  4. Wipe down the pan and re-heat it over medium-high heat. Cook ground turkey and break it apart in pan into smaller pieces until no more pink remains, about 5 minutes.
  5. Add soy sauce and brown sugar to the pan and stir to combine until all the meat is coated. Transfer turkey to a plate and set aside.
  6. Heat pan over medium heat and add butter. Fry Farmer’s Finest eggs until the corners begin to curl ever so slightly, about 3-4 minutes. Season with salt and pepper.
  7. Fluff rice with a fork. Divide rice between bowls and spoon in vegetable mixture and turkey. Top with fried egg, pickled onions, sesame seeds and sriracha. Enjoy!
