New year, same me! This year I’m jumpstarting my 2024 routine with a tried and true favourite: these easy 15 minute Coconut Chocolate Energy Bites.
A delicious and filling no-bake snack, I love making these by the batch (which costs a fraction of how much you’ll find them for at the store).
I always make some to enjoy right away and freeze the rest. Whenever I’m in a pinch, it’s great being able to reach into the freezer for a quick snack on the go, for a little fuel in between work meetings, or for an easy after-school snack for the kids.
Here’s how to make them!
Easy 15 Minute Coconut Chocolate Energy Bites
To make 12 bites, you’ll need:
Ingredients
- 1 cup rolled oats
- 2/3 cup unsweetened shredded coconut
- 1/2 cup milk chocolate chips
- 1/2 cup creamy peanut butter
- 1/3 cup honey (I’ve also used cinnamon honey with this recipe and it’s fab)
- 1/4 cup chia seeds
- 1 tsp vanilla
Directions:
This recipe is the perfect size for my Braun Easy Prep Mini Food Processor. I simply give it a few pulses to combine, though you could also do by hand or with a mixer (just make sure everything is well combined)!
Then form the mixture into balls using an ice cream scoop, chill for a few minutes in the refrigerator and enjoy.
Personally, I like mine best cool from the refrigerator (you can store them there for about a week) or you can freeze to enjoy later for up to three months.
