Yes, I like Piña Coladas. And getting caught in the rain. I should be much more into health food. And (clearly – given the name of this blog), I am into Champagne.
Don’t mind me – I couldn’t help but bust out some Robert Holmes because today is National Piña Colada Day.
As fate would have it, it’s also Friday and bright and sunny here in Edmonton, so I decided to celebrate by whipping up this iconic drink in cocktail and mocktail form. Safe to say that Elle has no complaints!
This classic Piña Colada is silky, smooth and sweet, making it the perfect summer sip (or for any time of year when you’re in the mood for a little taste of paradise). Here’s the recipe:
Classic Piña Colada Recipe
Yields 1 drink
You’ll Need:
- 1.5 cups of ice
- 3/4 cup diced fresh pineapple, frozen
- 2 ounces pineapple juice
- 4 tbsp premium coconut cream
- 1.5 ounces white rum
- Umbrella, maraschino cherry and pineapple wedge, to garnish
Directions
Add all the ingredients, except for garnishes, into a blender and blend until smooth. If the mixture is too thick, feel free to add in some extra liquid (pineapple juice or rum – whatever you fancy, lol) to help it blend. If you prefer a sweeter drink, feel free to add in one to two teaspoons of sugar as well.
Pour into a hurricane glass (or bonus points, a coconut shell) and add garnishes.
