One thing I really enjoy about playing bartender at home is trying to recreate flavours I was drawn to when browsing cocktail menus at my favourite restaurants. One drink on my most-ordered list includes the Bee’s Knees, a delicious cocktail combining citrus, honey and gin.
My blogger bff Alex came by for a date last week which seemed like the fitting opportunity for us to try making one (and to test out my new bottle of Agalima Sweet + Sour Mix)!
We ended up making Bee’s Knees two ways: silky and foamy, AKA the perfect posh accompaniment to your classy coupe:
And shaken over ice, making it extra cold and refreshing:
I was a fan of both versions but when it came time to make a second, I opted for the over-ice version (even though the frothy version has some serious added wow-factor)! Plus, today is National Gin Day, giving you the perfect excuse to shake one up!
Bee’s Knees Cocktail Recipe 2 Ways
Yields 1 drink
You’ll Need:
- 1.5 oz gin ( we used Bombay Sapphire)
- 1.5 oz Agalima Sweet + Sour Mix
- 0.5 oz honey
- Half an egg white (for frothy version only)
- Ice
- Lemon wheel, to garnish
Directions:
For frothy version
Combine gin, Agalima mix, honey and half an egg white in a cocktail tin. Shake hard, without ice, to emulsify the egg. Then add ice to the cocktail tin, shake again to chill and strain into a coupe.
Garnish with a lemon wheel or lemon twist and serve.
For over-ice version
Combine gin, Agalima mix, honey and ice in a cocktail tin. Shake hard and strain into a cocktail glass filled with ice. Garnish with a lemon wheel or lemon twist and serve.
Note: if you don’t have any Agalima Sweet + Sour Mix on hand, you can certainly use fresh-squeezed lemon juice.
I just loved how this mixture made the process so much easier for us. Made of single-pressed lemons, pure cane sugar and Jalisco blue agave nectar, it’s a tart and acidic mix with a just-squeezed taste that sits right in the balance of sweet and sour.
